Tradition
A cheese with centuries of island behind it
Majorero cheese has been part of life in Fuerteventura long before modern dairies existed. We follow that thread.

-
The Majorero goat
Adapted to an island of little rain and hard pasture, it gives concentrated milk with a character of its own.
-
An inherited gesture
The hands, the moulds and the timings come from earlier generations. Technology helps, but it does not replace the craft.
-
Time as an ingredient
Fresh, semi-cured or cured: the difference is patience, not additives.
We are gathering the history and documents of the dairy to tell this story here as it deserves.
